If you have never eaten a fresh fig, you are in for a treat.  My favorites are the dark Mission figs with an inside the color of strawberries.  Preparing one of these for eating couldn’t be simpler.  Holding it by the stem, give it a quick wash under the faucet.  Then, bring the whole fruit to your mouth and take a bite.  And then another bite.  When all that’s left is the stem, reach for another fig and repeat the process.  We’ll talk about other ways to prepare this wonderful fruit, but for now I just wander by the frig a few times a day and eat one ice cold.  Almost makes the summer heat worth it.  (Figs are at their best slightly soft but can easily get moldy and mushy when it’s warm.  So once they’re ripe, tuck them into the frig where they’ll keep much better.)
